If you have adwords account, you can log in and check the highest bids on specific keywords.Generally, you can find $5 or more bids on keywords. For example, in real estate, hosting, travel, automotive , you can find high bid keywords, but you must have a rich content that relates to these keywords to show ad in your site.
On the other side, yes the english sites are often bring more profits than non-english adsense sites

If you want to know which keywords are most effective, you can try Keyword tracking tools. Google has one and Word Tracker http://freekeywords.wordtracker.com. You can check which keywords are very popular (even by country). Google gives you 150 words per query and Word Tracker gives you around 30.
